Mesquite Wood has a bold, unmistakable flavor commonly used in
Texas-style barbecues. Mesquite has a rich, intense flavor that is very
smoky and lightly sweet. As a seasoning, mesquite often stands alone,
but it is nicely balanced with the bright, fresh flavors of serrano
peppers or orange zest. Mesquite burns very hot – too hot for some foods
– so it is best suited to quick-cooking cuts of meat.
